Freshness matters
Coffee begins changing after roasting.
That doesn't mean it needs to be consumed immediately, in fact, freshly roasted coffee normally benefits from some time to de-gas, but freshness has a noticeable effect on aroma and flavour.
Buying directly from a roastery makes the journey between roaster and coffee cup much shorter and clearer.

You know what you're drinking
One of the joys of specialty coffee is knowing more about what's actually in the bag.
Depending on the coffee, that might include its country, region, producer, variety, altitude, processing method and tasting profile.
Those aren't there just to make the label look impressive.

Roasting has a huge influence on flavour.
Our job as roasters isn't simply to make green coffee turn brown.
We develop roast profiles according to the coffee and what we want from it in the cup, then taste and evaluate the results.
Some coffees suit a lighter approach that allows delicate characteristics to shine. Others work beautifully with a little more development, bringing out sweetness, body, chocolate or richer flavours.
You're buying from real people
