Nestled to the west of the Central Cordillera in Cauca, Suárez is shaped by dramatic rivers, steep slopes, and rich soils. Families of smallholder growers work alongside neighbours to hand-pick ripe cherries, typically washing and drying them right on the farms or at nearby beneficiaries. Once processed, the beans travel to the cooperative or dry mill for cupping, sorting, and export. Across the varied microclimates and altitudes (1,050–1,850 m), Suárez yields fresh crops throughout the year—though most come through the main and mitaca (or “fly”) harvests. The region faces challenges like landslides and changing weather, yet its commitment to quality remains unwavering.
