East Java | Mixed Process | Organic

From the volcanic highlands of East Java, Java Kayumas is a wonderfully expressive Indonesian coffee bursting with tropical fruit, juicy sweetness and a smooth, creamy finish.

The coffee is produced by Koperasi Surya Abada Kayumas, a cooperative of around 145 smallholder farmers from the neighbouring villages of Kayumas and Curah Tatal. Working small plots of land in the mountainous Situbondo region, producers grow coffee beneath shade trees on the rich volcanic soils surrounding the Ijen Plateau.

Founded in 2008, the cooperative brings farmers together to improve coffee quality, processing and access to international markets. Its certification programmes have also helped support agricultural training, biodiversity protection and improvements to local infrastructure and coffee-processing facilities.

Java Kayumas brings together the Typica, Catimor, S795, USDA 762 and Lini S varieties, grown at approximately 900–1,600 metres above sea level.

What makes this particular Kayumas lot especially interesting is its combination of processing methods. Coffees produced using traditional Indonesian Giling Basah sit alongside Natural, Washed and Anaerobic processed coffees, creating layers of fruit, sweetness, body and complexity in the finished lot.

The result is anything but a stereotypically earthy Indonesian coffee. Expect a wonderfully playful combination of papaya, black grape and kiwi, accompanied by a creamy yoghurt-like sweetness and a juicy, fruit-forward character.

Vibrant, unusual and packed with personality, Java Kayumas is a brilliant coffee for anyone who enjoys exploring the fruitier side of speciality coffee – and a fantastic example of just how diverse Indonesian coffee can be.

Recommended Brew Methods

V60 / Pour Over ★★★★★
This is where Java Kayumas really comes alive. Filter brewing showcases its tropical fruit and juicy acidity, bringing papaya, black grape and kiwi to the front of a beautifully expressive cup.

AeroPress ★★★★★
A fantastic match for Kayumas, retaining plenty of its fruit character while adding body and emphasising the coffee's creamy, yoghurt-like sweetness.

Espresso ★★★★☆
One for the more adventurous espresso drinker. Expect an intensely fruity shot with juicy grape and tropical notes, balanced by a smooth, sweet finish.

Cafetière ★★★★☆
A fuller-bodied interpretation that softens some of the brighter acidity and brings more of the coffee's creamy sweetness forward.

Flat White / Cappuccino / Latte ★★★☆☆
Certainly interesting through milk, but not where we'd choose to show Kayumas at its best. Its unusual fruit character creates a distinctive cup, while filter brewing allows much more of the coffee's complexity to shine.

Our pick: V60 / Pour Over
For the brightest and most expressive cup, allowing Kayumas' papaya, black grape and kiwi character to shine alongside its wonderfully creamy sweetness.

As a small independent roastery, we occasionally adjust prices to reflect rising costs and to continue roasting responsibly. Existing subscriptions are unaffected.Â
