From one of Ethiopia's most celebrated coffee-growing regions, Yirgacheffe is a beautifully aromatic washed coffee combining bright citrus, delicate jasmine florals and smooth caramel sweetness.

Coffee in Yirgacheffe is typically grown by smallholder farmers on small plots of land, with ripe cherries picked by hand and delivered to local washing stations for processing. The region's high elevations and extraordinary coffee diversity have helped make Yirgacheffe famous for the elegant, floral and fruit-driven coffees associated with Ethiopia.

This coffee is grown at approximately 1,700–2,200 metres above sea level from Ethiopian heirloom varieties – a term used collectively for the remarkable range of traditional and locally adapted coffee varieties found throughout the country.

After harvest, freshly picked cherries are delivered to the washing station, where they are floated and sorted before the fruit is removed. The coffee is then fermented for approximately 12–36 hours, thoroughly washed and spread across raised beds to dry naturally beneath the Ethiopian sun.

The washed process brings wonderful clarity to the cup, allowing Yirgacheffe's distinctive citrus and jasmine characterto shine while a smooth layer of caramel sweetness provides balance and depth.

We roast our Yirgacheffe to a slightly deeper medium profile, giving the coffee a little more body and sweetness while preserving the delicate floral and citrus qualities that make it so distinctive.

Bright, elegant and beautifully aromatic, this is a wonderful introduction to the character of washed Ethiopian coffee – expressive enough for the adventurous coffee drinker while remaining wonderfully balanced in the cup.

Yirgacheffe and pour over are a wonderful match. This method brings the citrus and jasmine character to the front, producing a clean, aromatic cup with delicate florals and lingering caramel sweetness.

A brilliant option if you want to retain Yirgacheffe's brightness while adding a little more body. Expect citrus, floral aromatics and a beautifully rounded sweetness.

A more adventurous espresso than our chocolate-led coffees. The slightly deeper roast gives it enough body for a beautifully sweet shot while retaining plenty of citrus brightness and floral character.

It can make an interesting, fragrant milk drink, but this isn't where we'd choose to showcase Yirgacheffe. Milk softens the delicate citrus and jasmine qualities that make the coffee particularly special.
